Yummy cake


I am still preparing for next week's baby shower that I am throwing for my friend, Elise.  I am assigned to bring strawberry cupcakes, and I found a recipe on howtoeatacupcake.blogspot.com
The frosting is a whipped mousse cream cheese frosting that I added a few drops of red color to to make pink.  It is a delicious cake, so I'll be using this recipe for the cupcakes that I bring next weekend.

Pudding Pie and Presents!

Here is a hodge-podge of a post! Our camera charger is lost somewhere in our house... so we have a dead camera and no good pictures. Fortunately, I have been taking mediocre pictures with my camera phone. haha!

This is a chocolate pudding pie that I made Saturday. The chocolate pie crust is store bought, the whip topping is store bought.... but the pudding is homemade from SCRATCH! Thank goodness for my trusty Betty Crocker cookbook. I was a little nervous about putting 2 egg yolks into a pudding... but it worked and Elise and Caleb both said it was delicious. And of course, I added the chocolate shavings for presentation :)
This is a wipe case that I decorated. Thank you to Pam for the idea! I am giving this to Elise for her baby shower since she is having a little girl. If anybody would like one of these, let me know... I have made 2 so far, but only for girls. I would really like to try to make a cool boy one.

These are burp cloths that I sewed for Elise too. I have had a lot of extra time at work this week to search the internet, and I've seen some burp cloths that are kind of "reversed" with the white soft section in the middle and the printed fabric on the edges. I might try making that soon too.
I still have to finish the backpack surprise I'm making for Dave to use at Kindergarten. Once I get that done, I hope to post some pictures. Hint- it features a really awesome monkey.

Flautas are not poisonous!


Last week I made flautas. I wasn't 100% sure what this involved, but just knew that we used to have them at Tres Hombres when I worked there. I wanted to make Caleb's with pork, and had an idea that putting in shredded BBQ pork would be just the way he'd like it.
This is the only picture of the meal that I have, but I figured, I'd go ahead and post it, half eaten and all. I made the flautas for CB with the pork, and for me with just beans and cheese. I made my special homemade guacamole recipe, and found the recipe for the rice online. I think it was cilantro-lime rice. Anyway, the meal was very delicious and as homemade as it was... not so hard. CB wolfed his up.
The next morning though... he woke up very ill. I was not sick, so his first thought was that the pork must've been bad (being the only thing he ate, that I didn't). Guilt, guilt, guilt. I thought I'd poisoned him, after all... But later that afternoon he had a fever, and we found out that a 24 hour flu bug was going around. Whew. I had already thrown out all the rest of the frozen pork, though, so it still might be awhile before I try this dish again!

Seriously. Every recipe I've tried from this site has turned out delicious. It makes me feel so gourmet too! Caleb had 3 of these muffins before noon today. Haha, I did too.
